    From my understandings,

iTunes will restore almost all datas to your iPhone but still need to authorise Apple Pay, Touch ID, Siri...

iCloud will only restore those apps that turn on via iCloud Manage Storage, safari bookmark, messages, home screen layout, settings tweak...

It will take sometime to download apps, camera roll photos.

You will still need iTunes to manual sync musics and photos from iTunes.

iCloud is slower and tend to have missing data if connection is interrupted.

iTunes is faster as it fetch those data from SSD.

    Anymore to add?

One big caveat of iTunes is that it needs access to the media (music, films, apps) when it restores a backup. Since iOS 9, Apple has stopped syncing apps from an iPhone/iPad to iTunes. However, this is essential when you restore, as it cannot restore an app that isn’t located in your iTunes library. In that case it will only restore the app’s data, but not the app itself. This can screw up the restoration and leave you with holes on the home screen. Restoring from iCloud Backup loads the current version from the App Store, so it isn’t a problem there.
