When using iTunes in different countries, will the iTunes store automatically detect the location and switch to that particular country's iTunes store? Or will I continue to be able to use the original store my account is linked to? Or can I use both?

What happens to the apps I've downloaded or purchased? I'm assuming I'll have access to them even if copyrights and legal matters are different in different countries?

No, it will not auto automatically detect.
You can use yours. You can use any iTunes store in any country but you will need to set up a new account for each store. A new account will need a gift card from that country or a bank card from that country to purchase.

If you have apps downloaded, you can use them wherever you are.
