just that. i switch regularly between 'external headphones' and a usb audio device, i never use the mini's internal speaker.

is there anyway to hide it from the sound output settings? (am using the sound setting menubar icon). alternately, is there a simple audio app that i could use to see only the outputs i want in the menu bar?

Though I don't see why it's an issue. Just select the one you want and ignore it. I have about 4 output devices I never use shown and they haven't caused any issues for me by being there.

of course. just annoying that i have to skip over a choice i never use. not life & death, just... annoying...

To me, it's no more annoying than menu bar menus I rarely or never use in an app, which is to say not annoying at all. But obviously we have different opinions here.
it's not about opinions, it's simply what affects us in our own experience; no one's 'right' or 'wrong' here.

i go back & forth between my monitors and my headphones often, and i find it annoying i can't remove the mini speaker option that sits between my 2 choices in that menu. but somehow.... i will survive...

Well, when we're both doing the same thing (I often change output sources as well) yet come to different conclusions about how the same thing affects us, I'd say we're safely in the realm of opinion, which is precisely why no one's right or wrong here, as you said 😉 Anyway, hopefully you'll find a way to do what you want--even small things can make a difference!
 
I looked into this last year after I got an LG monitor that has a 3.5mm audio jack on the back. Shows up in macOS and annoys me, also.

I couldn't find a solution.

The really stupid part is that I don't even have the LG's audio selected to do anything (I've got a Presonus device set for input and output) and yet when I touch one of the audio control keys on my keyboard the onscreen control comes up for the LG.
 
it's definitely one of those (numerous) places in the OS where some degree of control, some options... could be useful. but... so it goes. on to the next challenge... 🤔
