Anticipating a crash on a 13" 2012 MBP, running 10.10...

In disk utility, what's the qualitative difference between backing up files with a disk image, versus restoring to an external drive?

From what I can tell, it looks like the only option I have for the disk image is to copy the entire volume, versus restoring where I can copy individual folders, but have to erase the contents of the external drive while doing so...

Will both have relatively the same effect in a new environment? Like, either way the files are saved?

THANK you.

If you use a program like Carbon Copy Cloner to clone the drive to that external hard drive; the computer can be booted from that external drive in the event of a hard drive crash. Does disk utility also give you a disk image that is bootable on the external drive?
