I thought Apple said that the brightness will go brighter when it's darker, and get dimmer when it's brighter. Why is mine doing the opposite?

Nope, it dims in low-light conditions and brightens when there's a lot of light. Think of it this way; if you're in a dark room then it's going to be easy to see what's on the screen when it's dimmed. If you're sitting in bright sunlight, then the screen needs to be brighter otherwise you won't see anything (or it will be very hard to see). The way it's working for you is the way it's supposed to work :)
