So what does this mean? That Apple is aware that the Samsung displays look best?

Well if you check the their on-display Air's most if not all are Samsung screens, I have tested all the ones at the Apple Store close to my place - everyone of those were samsung.

They want people to see how colorful/full of contrast the Air's are...once you order online ... its all matter of luck
 
Interesting theory but the sample size is far too small and the unknowns too great. Not saying your hypothesis is incorrect, but a logical counter would be that said Apple store received all of their Airs in the same batch which just happened to be a Samsung delivery. I'd be curious to know if anyone else has investigated this at their local Apple store(s) and found similar/different results to share.
 
My Air has a Samsung display and it's a good one.

It's a shame Apple has to "go thermonuclear" on Samsung. Suing them and creating a very adversarial situation. That Apple must feed it's ego by playing the bully is sad.

Indeed, that is a component of the issue, but the central component is that patent wars are extremely profitable for A) patent lawyers and B) the company that wins the legal battle. And unfortunately patent law allows for the mess.

So it's quite complicated and Apple is by no means the only guilty party involved.
