Hi, I need some clarifications.

Do Dolby Atmos, Spatial Audio 5.1 7.1 and Loseless work only under MacOS and iOS? How about Windows?

Do they work only on music and video files downloaded from Apple Music or files from any other sources that have Dolby Atmos supported ?

Do they work on the AirPods Max automatically right out of the box? I tried to play some Dolby Atmos demo videos but my AirPods Max had no sound. What could be the reason?

Lossless audio is not available on any AirPods regardless of platform you listen on. Not on iOS, not on macOS, not anywhere. As for Dolby Atmos I would greatly assume it would be supported anywhere there's Apple Music, but I don't think anything official has been said on the matter

The AirPods Max have always accepted Dolby Atmos sources. The news is that Dolby Atmos is coming to Apple Music, it's not new that the AirPods Max can play Atmos. It should work automatically. Why it didn't work in your case I don't know. I will say however I don't have a pair to test, I only know what I've written here from what I've read and heard from Apple. It may be incompatible with non-Apple platforms for some reason, but that'd seem a bit odd

Atmos on the AirPods Max is distinctly underwhelming. It doesn't sound at all like a multichannel speaker system. It's basically just normal headphones with head tracking to pan the sound left and right as you turn your head.

Hope Apple will clarify this today.

I believe you have to turn on Spatial Audio in the Accessibility settings. Atmos and Spatial Audio only works with video streaming services that support it... AppleTV and HBO Max are the ones I know about. It won't work with Netflix Atmos content, but aside from the head tracking, I can't hear any difference between AppleTV, HBO Max or Netflix. They all sound the same.
