in the past or at least with my iPhone 11 and earlier I had to unpair then re pair my apple watches to my iPhone.... is that still the case with the Quickstart device to device? thanx!

I didn't have to unpair this time. It asked me if I wanted to pair with my new phone after restore opened the watch app on both phones it asked me to verify if that's what I wanted and it moved over. The only thing missing are my awards on my new phone because for what ever reason Apple never gets those to transfer right.

Heads up though, after the transfer, some notifications on the watch have missing app icon. I’ll be resetting and repairing my watch.

Like others said i didn’t need to unpair my watch from my old Xs Max…. setup new phone, watch asked me if i wanted to transfer to the new phone press yes and boom it was done. My music didn’t even got erased everything stayed exactly the same. Only thing now is i can’t use unlock with Apple watch to unlock my phone when wearing a mask

@big samm The mask unlock-with-watch issue is a widespread bug. Hopefully Apple will get that solved soon. They are certainly very aware that it's not working. I've had new phones that had bigger problems, but punching in a long code (required by employer MDM) gets pretty tedious.

My new 13 Pro seems to not be able to find the watch even thought its connected to my 11 Pro and is working fine.
