I'm also in the same boat. While I don't really know if classes will be demanding on my lappie, Here is what I currently do:
Video editing
Light photoediting
File conversion and large file movement
Cd burning
pretty intensive browsing (maxes out my current CPU)

Here is my current laptop:
Dell Vostro 1510
Bulky 9 cell battery-gets about 4hrs word processing/web
Core 2 duo 2.1ghz
Nvidia 8400m gt 256mb
4gb ram
250 hd 7200
Like 1280 res on 15 inch screen


I frequently get frustrated because even opening a couple programsaxes out my processor and using one note while browsing actually causes freezing.

If you don't have a budget limitation, go with the 15" or 17" 2.3 GHz MBP with 1680x1050 display and 6750m.

If you have a limited budget and it absolutely must be a laptop, there are a number of cheaper (and significantly bulkier) windows laptops that can meet your needs. (or you can build a powerful windows editing desktop relatively cheaply)

If you can wait for a couple months, it would be good to know what is coming with the 2011 FCP update.

While windows 7 kind of works, I've had so many malfunctions and sleep never works properly. Budget isn't a huge issue as I will be working to pay or it. I'll probably just use some generic converter program. Would the high end 15 be a good choice as far as worth an resell value? I do some minor gaming (probably will get COD with new laptop)

On Wednesday (1 day before the release of the 2011 MBP's), my coworker just sold his high end 15" 2010 MBP 8GB RAM, no SSD for $2200 (original cost was $2600).

Ah. I see then. I think I should be fine getting the higher end 15 because I'd really rather not have the resolution of the 13. I can always sell it just before an impending refresh and then update to 13 when it's specs are a tad better.
 
I would ditch your computer science major and switch to a major in the field of medicine. When you graduate, nobody will hire you for your skills with computer science.
 
You probably don't need one. The software and stuff you will do in CS is not resource intensive. The only situation I've encountered where extra power would have been nice is if I use Windows or Linux only programs that I need to run in VMware.
