Or will the pre-installed SIM card work? My 6S Plus is still showing the temporary number under the "Phone" part of the Settings app.

Carrier Do I need to put my old SIM card in my new 6s Plus?

Which carrier? My AT&T phone worked just fine with the pre-installed SIM. Activation went through fast.

T-Mobile. And yeah, the last time I got a new iPhone I didn't have to use my old SIM.
Figured it out. For anyone that has the same issue-
Login to your T-Mobile account and go to the "Phone" tab. There should be a section for managing SIM cards- click through and you can enter the ICCID listed under Settings->General->About. That will let T-Mobile know to associate your phone number with the new SIM card. For good measure, I entered my number in the "My Number" section of the phone settings- but I'm thinking that might not be necessary.
