Hi,
For about 14 days ago I did get a kernel panic that was caused because of my bluetooth, I think.

What I did have connected was my Logitech MX Anywhere 2 trough bluetooth, I also did have the Logitech software installed that showed up in the kernel panic log.

I did run macOS 10.12.3 or if it was 10.12.2 on my brand new MacBook Pro 13" 2016 nonTouchbar.

What I have done:
  1. Re-install a clean install of macOS 10.12.3
  2. Run memtest86+ for 13h and it did not show any errors for the RAM.
  3. I have not installed the Logitech software (driver (kex)) again.
  4. I have done the boot with "D" key and that did not show any hardware issue.
So I still use my Logitech bluetooth mouse without the Logitech software and I have not gotten any more kernel panics after I did do a re-install and I have not installed the Logitech software again.
I have been using it for about 13 days now without kernel panics.

Is it safe for me to assume that this issue was because of Software (Logitech driver (kex)) and not a hardware issue?

In a word yes it's fine if it's not kernel panicking again you have fixed the issue.

A single KP is not something to get overly concerned about. I'd say if things have been stable now you're all set.

Third party drivers like Logitech certainly can add some bugs or instabilities into the system.

Yeah, after some googling it seems that Logitech drivers has causing issues for many years - it's strange that they never fixes them.

I found that for some companies, Macs are an after thought. I have a scanner and printer that Epson and Canon never update for OS X but do keep the windows apps/drivers up to date. Just seems to be one of those things.

I think this completely software-related. Logitech is one of the most Mac-incompetent companies I have ever dealt with. It got so annoying I bought Steermouse and stopped buying Logitech products.

When El Capitan came out, it took them over a year to update the LCC software just so Users could use multi-button mice (as their older software did not work) - then, after snoozing on it for a year, what they brought out was one of the most POS attempts I've ever seen and caused quite a few issues for many users.

So to me, this appears to be the Logitech software. If you still want to be safe, you could perform the Apple Diagnostics to check for several types of hardware failure, but I don't think it is necessary, personally.
