I have some old games on my phone that aren't on the store anymore but still work fine. I'm on ios 15.7.1 but it's pushing me to upgrade now. I don't know how things work, will all the apps still be fine or will they not be compatible anymore

You can only find out an an app-to-app basis.

If there is some app that you absolutely must be able to continue using, your best bet would be to reach out to the developers and personally ask whether or not their app is compatible with iOS 16.

99% of the apps I use on a monthly basis have worked, but 16.xx borked two of mine. No games, just useful utilities that I’ve used for many years.

You’ll have to ask about specifics, cause there’s no blanket answer.
