Do the 2011 Mini's have Sata III or 6GB HDD

Both ports on new Mini are SATA III. However with a mechanical hard drive you won't even push the limits of SATA I. If you want to install a SATA III SSD then having SATA III is great.

OWC did a test with two of its SSDs in RAID 0 so it is possible and yes it is very fast.

There another downside of RAID 0.

You will lost your data if either 1 hard disk fail.

there are SSD's that do 550GB/s which is about the limit of SATA III so RAID 0 shouldn't be necessary.

I'm running two SATA II SSDs in RAID 0. I get around 500 MB/s read and write speeds. I'm really happy with this setup.

Apple SSDs are SATA II. They're still a big improvement over using a mechanical hard drive.

I using single 550GB/s one, they are quite fast to boot up your OS X Lion and install application on your OS also.
Very fast to start up your application also..
