I know the previous gen still used Sata II or 3.0GB but not sure if the new Mini uses the 6GB like the new MBP's do.

Both ports on new Mini are SATA III. However with a mechanical hard drive you won't even push the limits of SATA I. If you want to install a SATA III SSD then having SATA III is great.
 
I using single 550GB/s one, they are quite fast to boot up your OS X Lion and install application on your OS also.
Very fast to start up your application also..
