Do you have cellular enabled on your Apple Watch?

I use my Ultra with an Android phone so having cell service on the Ultra is necessary to get all my notifications, calls, texts, etc. If it wasn't for that I probably wouldn't bother.

I have the AWU, it came with cellular. My wife has the 8, no cellular. I asked her if I should activate the cellular (knowing full well I wanted to…and know full well what she’d say). Answer: “Absolutely NOT! It’s a waste. I’ve had an Apple Watch for 6 years and never needed. Now you all of a sudden get your first one and think you’re better than everybody? Forget it mister.” 🤣🤣🤣. Exactly how I thought that would go. She pays the bills. I’ll work on it later.
But seriously, I mostly want it to go for runs or play baseball with my son without having to bring my phone.

Yes. The phone stays home unless I feel I will "need" to take photos. Apple Watch cellular + AirPods are my everyday, go almost everyplace combo.
