I currently have an Apple Watch S1. Does it require for me to bring my iPhone with me whenever I workout? I would like to keep track of my steps, calories, map of my workout, etc.
 
Apple Watch S1 doesn’t have a GPS receiver so you will need to bring your iPhone if you want a map of where you went during your workout.
 
AW S1 requires the iPhone for GPS map.

AW S2-S3-S4 does not require the phone.

Word of warning - although the AW S1 requires the phone, that does not mean the software will support it. So check with your app of choice. Default Apple Workout App does support it. However, Nike Run Club will not draw a map on a S1 when you take your phone. It used to, but they removed that feature a year or so back.
 
I taken my Series 4 GPS on walks without the phone and it's tracked my workouts. I've even listened to downloaded podcasts while on my walks, too.
