Warm displays are easier on my eyes, but I much prefer cool displays because I notice the yellows/orange tones much easier than the blues. I think my 6s display is on the cool side, but I really can't tell unless comparing side by side with another phone; so I'm happy. My wife's 5s on the other hand is quite warm, but she does not care in the slightest.

Agreed. Warm may be better for my eyes but I like the cool blues much better. It's no different than when I buy flourescent bulbs. I always gravitate towards the cool blue/daylight bulbs over the warm toned ones.
 
For whatever it is worth, it seems to me that our preference is to read text on a background that is a sort of light maize color.

It is simply less fatiguing.

I can only think that our preference for whiter, bluer screens is influenced by the fact that we do not read as much anymore.
Interesting theory. I'd say I now read just as much as a I did as a bookworm kid, but most of my reading is on a screen rather than a book. If I'm reading webpages/newpaper sites and the like, I definitely like the cool blue. But if I'm curled up with my iPad/iPhone and an ebook I usually do have that maize background. Unless I'm reading in the dark, in which I invert the colors so the bright whites don't hurt my eyes.
