It may or may not beat the 8800 Ultra, but even if it doesn't, what are the prices? Is not the R600 significantly less expensive than the 8800's? Maybe an 8800 Ultra will beat an R600, but it sure won't beat two in Crossfire (now hoping Apple allow people to do at least dual HD2900XT in Crossfire in new Mac Pro) :D

Well, judging by 'new card prices' it will probably be around 1k (AUD) when it comes out. Considering the competitive 8800gtx is around $850 AUD, Nvidia will probably undercut ATi slightly as it has been out far longer.
However the 8800 ultra will probably change the pricing again, making the 8800gtx slightly cheaper and the 8800ultra slightly faster.
I'd say the 8800gts's will continue to be excellent value, regardless of what ATi brings out.

The AMD cards are rumored to undercut the MSRP of NVIDIA.

The Radeon HD 2900XT is supposed to be $399/€399 and the Radeon HD 2900XTX is $499/€499.

Which would likely make the Mac Pro version $500 and $750 dollars under the BTO options, and likely $100 more stand alone. :p
