Does anyone know how to change pictures of the icons in your dock?

There is really no way to change the icon in the dock directly, but you can change the application icon for that item in the dock, and the dock icon will change. To change the icon of an app, right click the icon you want to place on the app, and click get info. Then click on the icon in the upper left hand corner and copy it. Then use the same procedure to open get info on the app you want to change, right click on its little icon on the upper left and past. If this was unclear, just post back and I'll try to explain it again.

Of course Apple have a wide selection of great icons on their OS X download page for those who want to add a few modified icons that aren't too obscure.

CandyBar has a feature where you can change application icons with ease.

Customize Apps & Their Toolbars | View Screenshot
Love Apple's Mail app, but don't care for its toolbar icons? Using CandyBar's Application and App Extra modes, customizing applications and their associated icons is a snap. CandyBar scans your hard drive for installed apps and lets you drag replacements from the Finder or from Pixadex to quickly change them. Reverting back to your originals is quick, easy and safe too.
EDIT:This is more about apps toolbars but it does change icons as well
