If I have iCloud set up and all options checked, including "Documents and Data", then what exactly gets uploaded to iCloud?

If I dump, say, TIF files or Photoshop files in Documents, then will they be uploaded to iCloud? (Hopefully not...)
 
No, that won't upload anything to iCloud from your Documents folder. The only documents etc iCloud will upload are those created with iCloud compatible apps like Pages or Textedit (in Mountain Lion).

When you start a supported app you get the below screen asking if you want the new document to go to iCloud or "On my Mac" (which will go to Documents).
