I use it. My is organised thus:

The music folder in my Documents folder is stuff that I've written. I leave the main ~/Music folder as my iTunes storage. I like to keep my user folder pretty clean, just the default folders plus an Applications one where I do my program development.

Click on the Finder icon in your dock, then from the menubar open "Finder->Preferences". Select the "General" tab of the prefences window and unselect the "Hard Disks" option under the heading "Show these items on the Desktop:".

I have folders within Documents for my financial stuff, my shopping PDF receipts, my CV, my writing etc - I don't use Documents itself as a storage space.
I created images (DVD size) for stuff like this. I mount the image when I want to use the files. And since the image is DVD sized, I can burn a backup whenever I want and it will fit nicely. Usually I backup to another HD, but it just makes it easier if I want to make a DVD backup.

Also, I've protected my images with password and encoding which makes the data a little bit secure.

For the rest, I am like Shard. I use the folders in the Documents folder for music, movies, pics, etc. Engineers think alike. ;)
 
Yes, Yes I do.

I actually use the mac os colours on the folders to specify which folders are important, and which are un-important. (I have a 'one-time use' folder I use to dump all my day-to-day stuff) but I'm feeling quite organised for this first week of Uni.. probably will last until.. next monday, :p

I didn't use it at first, but now I use it to store subfolders (receipts, work, Mac stuff etc). I usually have apps save to my desktop, because I like to drag them to the various places I need to store them in my own system. (That is, I don't particularly enjoy dragging individual docs, but I want to decide myself each time where they ought to be stored :p )

On my desktop, I only have a very few folders of the most pressing things I'm working with. When those jobs are done, I move the folders into Documents.

It's a great system that I've already adopted. It just makes sense to do it (and less paper clutter).

I also find it annoying that applications are allowed to do this without so much as giving you an option. It's to the point where I've told the computer not to show hidden folders, and then I make the annoying ones hidden. The're still there to be written to, but they're not invasive the majority of the time. (Unless I need them, which is never).

We have iMacs at school and each student as thier own login. I tend to use the documents folder to save a lot of different things as it is just an easy place to go and find stuff, certainly going back and finding documents and such. But also my desktop is full of stuff. I really have this bad habit of never deleting anything and keeping stuff. You can look around my desk and on my harddrives to see that I am a major pack-rat. I think I use all the folders on the computer :D
 
I never really used to, but now there are two people using the same login, so documents tend to get spread absolutely everywhere. To combat this, there are now various subfolders within Documents.

I wouldn't say that this system is working out any better (there are currently several hundred documents sat in the 'To Arrange' folder :eek: ), but at least documents are where they are supposed to be, and anyway, Spotlight is marvelous. :D
 
I use mine, but agree with many comments here... I don't like it how some apps "invade" my space!

Currently in uni, I have subfolders for each module/course I take plus an encrypted folder for personal info.

No porn in there tho... that's just yuk.
 
I'm still a relative newbie at all the OSX-stuff. But after doing some tutorial I found out that the system places any folders, starting with '@' and some other symbols, at the top. Appart from colour-coding, I think this can help bring some clarity to the chaos other applications can cause in that folder.

Hope this helps someone.
 
I use the documents folder, to uhh...Hold my...documents.

Sadly its also my most disorganized folder. I have a bad habit of keeping a few of my nested folder above the folder it should be in. So its a bit messy unitll im done with the nested folder and can actually nest it.
 
I use it for my misc documents that don't fit (meaning not appropriate not disk space left :p ) into the folder's I've created in my home folder.
 
I use it for random documents, so I don't use it often, I have a school folder on my desktop that I use often
