Looking to buy a new iMac and I don't do gaming at all on computer. But I do a lot of aperture (over 30,000 photos) and some video editing. I will get the i7, fusion drive and self upgrade the ram. Just wonder if the video card upgrade would benefit for me?

For what you do, the video card should be your first upgrade...
 
3D Rendering Speed improvement over the 675MX is about 10%.
If you don't game, you certainly don't need it.

You might not see even that much with Aperture.



If you use your iMac in a professional production environment it may be worth the extra money. Somethings, especially video rendering will go faster.
