I feel like doing a complete restore of my iPad..just to sleep better at night. I'm sure random files and caches may have saved somewhere but essential like to start anew with the iPad every once in a while.

I'm wondering if using a previous iPad backup in my iTunes automatically fills up the iPad the next time around with my info sorted out in iPad's Mail and Calendar.

I'm pretty sure the iTunes backup will restore everything except the Cydia stuff. Mail accounts, apps, etc that show in iTunes should be backed up and restored. Cydia and jailbroken apps are a whole different story. Maybe look in Cydia to see if there is so way to backup those apps. Otherwise if you jailbreak again after the restore you will be starting over in that area.

IMO, what you're thinking of doing isn't worth it. In order to "start anew" with an iPad (or iPhone or iPod touch), you have to restore and set it up as new. Restoring from a backup will just put back all the random files and stuff that you are concerned about. To clear your cache, there's a switch for that somewhere in Settings.
