Just curious, will Apple ship the iPhone 7 Plus phones every day...or just on certain days like Friday's or Monday's?

Does Apple Ship Everyday

I think shipments go as fast as supply can handle demand. Don't believe their relegated to specific days.
The launch day batch will go out dependent on destination.
What I mean by that is that Apple takes into account where the phone is to be delivered and will ship on a day prior to launch day that allows the phone to be delivered no earlier than launch day.
UPS and FedEx face stiff penalties with Apple if they deliver earlier.
But once launch day is here Apple will begin to ship at whatever time and day they receive a device that fills the order.
I seem to remember some phones being delivered on Sunday?
I thought I read that the last couple of years.
I think they do get stock on Sundays,I remember checking the apple store app Sunday night after they closed and it showed they had stock in. Dont know if it was a shipment or just leftover stock from people that didnt show.
I know at our business the only day we don't get shipments is Sunday. That being said we are not the behemoth that Apple is and I'm sure ups and fedex make exceptions for Apple.
