I heard somewhere that if even if you back up your old iPhone and put the backup on a new iPhone, all save data for games disappears. It this true? Is there anything I would be able to do about it? Just wondering b/c I plan to get iPhone 3G S next month when my contract expires (I save money by doing this instead of buying it now) and I have a ton of games on my original 2G iPhone. Games like Katamari, Rolando, or Peggle where I have made hours of progress would have to be started over.

No, there is no way to back up info from third-part apps from the app store.
