Just curious, since I've enabled iCloud, does that mean that everything in the Documents folder is automatically backed up?

I must say that I understand the concept of iCloud but I really don't understand it fully. So it is NOT an online drive like all the others right? so I can't go to some folder and see my files right?

I'm a mac noob so if someone could point me in the right direction, please do.

Also, if iCloud isn't really a BACKUP solution, which of the others is preferable? (google drive, ms skydive, etc)

None of those you mentioned is a backup service. There are some net based backup services, but you need to research each one. The cost of the service, the limitations. And more importantly if your internet service has a monthly data cap.

Even if you go with some sort off internet based backup, I suggest you also use Time Machine for a local backup. This would allow for the fastest recovery in case of a disk failure.

so then if I only have one apple device which is my mac and I use icloud, AND my mac becomes broken, etc... do I get my files back?

I guess I wasn't clear on my idea of a backup. When I think of iCloud, for some reason I get the idea that my files in certain folders are on apple servers too.
