I mean, if the SIM tray is taken away, in this case, is IP68 still applicable to it? Or does it only apply when SIM tray is inserted and closed?

The SIM slot is mounted on the logic board. Without the SIM tray inserted, the iPhone will ingest water.

The sim tray has a rubber gasket that plugs the hole, removing it and submerging the phone will literally fill it with water.

I am equally happy about apple removing the sim slot from iPhones/iPads as with the removal of CD-ROMs from Laptops.

With the removal of the sim tray wonder how one checks for water intrusion now? those water damage indicators no longer accessible easily.

There are indicators on the logic board and display assembly. I don’t think those indicators were intended for consumer use, rather for Apple to deny claims.

Indeed. However I was under the impression that the SIM card slot water intrusion detector was visible on a consumer level. ?
