All the iPhones have sim trays that can hold a physical SIM card.

Excuse my ignorance (this will be my first mobile phone!)... So, if I purchase the Unlocked option without a Plan initially, does that mean it comes with no SIM card? Conversely, if I order one with a plan from say AT&T, then it arrives with a SIM card installed?

If you buy the unlocked model, there will be no sim card in it and you will need to get one from the carrier. If you get the AT&T model, there will be a sim in the phone. All you will need to do is turn on the phone and wait for the phone to activate with AT&T.
