If I am using my iPhone for navigation whilst driving; will the iPhone automatically turn off using cellular data, when I'm driving in my 'downloaded map' area?
 
No. If you don’t want Maps to use cellular, you should turn off cellular data in the Maps setting. That or set it to always use maps offline.
 
When using Offline Maps, you don't get live traffic data, so you don't get dynamic route planning. So Apple will always use the online maps if it can. I live in a region where there are still areas without cellphone coverage, and the handover from online to offline is very smooth, and the screen shows "Using Offline Maps".

What confusing is what is on the Apple Support site. It says:
"Turn on Only Use Offline Maps to rely on your downloaded maps even when you have an internet connection." -- this is a bit confusing, hence my initial question and the reply from the above post by 'dallardice'.

If you select using offline map only then app will use offline map even if you’re having internet connection. It won’t “turn off” cellular data though. It simply doesn’t use it for map

"Only Use Offline Maps" is a setting in Settings > Maps. What I described is the default behaviour. If you don't want Apple Maps to ever use Online maps, change that setting.

I’m curious; I’ve not downloaded any maps. Does that setting only appear if you have onboard maps? I don’t have see that option in Settings/Maps.

That's possible. If I go into Settings>Maps I have a section (between "Allow Maps to Access" and "Preferred Type of Travel") that gives me four options: Downloads Wifi/Mobile; Automatic Updates; Optimise Storage; Only Use Offline Maps. None of these make sense if you don't have any Offline Maps so maybe they only appear if you have initiated an offline map.

Thank you! That's the question I meant to clarify in my initial post. I did not mean does it physically turn off cellular data; I meant just not use any cellular data when you're in your a offline map area.
