I'm new to the whole Apple experience, but trudging forward w/ my new MBP. I can find the plain text - rich text preference selection, but can't find whether or not html format is a choice.

Please advise...and thanks in advance for your thoughts on this issue!

Display of HTML is controlled at the destination, not the source.

HTML is not a format; it's a markup language. If you're referring to displaying links and other HTML data in the body of an email, rich text format will support that.
