I ask this because the temperature & humidity fields on my Ultra 2 go blank when i'm out in the middle of the desert. Or can it only display this info based on predicted weather forecast through Weather app (obviously useless if i'm in the middle of nowhere)?

Nothing about an ambient environment temperature sensor.
 
Air temperature and humidity come from weather reports. The Watch does not have an ambient temp and humidity sensor built into it,

Wonder, though, why you think that weather data is useless just because you are out in the middle of nowhere?! Weather patterns cover wide regions and there are predictions for many small places. Very likely there's some town or some location or station near enough to where you are to get a sense of how hot and humid (or cool and dry) it will be!

Thanks, but i often have to go 100+kms south west of Abu Dhabi (UAE) into Empty Quarter desert for work....i can assure you there's no villages or small towns nearby, just endless sand dunes! Hence why the actual temperature/humidity of where I am would be useful rather than a location 100s of kms away. For example, the other day whilst inland, watch was showing humidity of 90% with temperature of 40c, yet it felt like humidity was close to 0% and temp was in high 40s. So clearly watch was showing a weather forecast from a place far away (most likely in Abu Dhabi) whilst I was in the deep south. But usually the watch doesn't display any weather readings despite having good cellular signal.
 
Yes, you are out in the boonies! Can’t you just assume it's going to be outrageously hot and dry in the desert there — and plan accordingly?! 😁

Alternatively, it would be easy to buy a thermometer-hygrometer combo! Battery operated one’s are available if there's no power supply. They’ve not that expensive.
 
My Apple Watch Ultra 2 only tells me current temperature readings of water when it's submerged. Anything else you'll need a different device.
