Hi,

every time I try do download or upload some file (a photo, some tune), my Mac shows a dysfunctional downloading/uploading window, where instead of a regular sidebar (with folders like Desktop, Applications, Downloads, Google Drive and so on), there is something like 'Media' or a blank space only. Cmd+J or Cmd+Option+S don't work.

Have you tried dragging the folders back into the sidebar?

Yes, I have, but all the dragged folders vanish after you close the downloading/uploading window by clicking 'save' or 'upload', so a new window has an empty sidebar.
 
Does your Mac have this file: com.apple.sidebarlists.plist ?
I have an older system. Mine is in Users/MyUserName/Library/Preferences

If you have it (NOT from a different Library folder, THAT one) trash it and Restart. See if that helps, it can't hurt.
