If using a 14 MBP, would I be able to connect two studio displays with one cable, or would I need to use two TB ports (one for each display?)
 
You can use Caldigit TS4 dock. It supports dual 6K60Hz displays and should be able to support dual 5k as well.

I saw this chart from CalDigit, but to my knowledge, this is not technically possible. Thunderbolt has a maximum bandwidth that can't support two 5K60 displays over a single cable. Some tests that people made in an other thread with an Ultrafine 5K and a Promotion XDR pointed out that the 5K display was not getting its full resolution when connected with an other display on the TS4 dock. So I don't know what kind of magic CalDigit did in their testings, but I will believe it when I'll see a real world proof of that claim

So does that mean in order to support two ADS, you have to connect them directly to Mac machine?

Granted, one connection to have go through a dock with all the accessories and then the other connection is just straight to the Mac?

If you have 2 ASDs, you will have 6 high speed USB-C ports...do you need the dock? there are dongles.

A Thunderbolt 3/4 port carries two DisplayPort signals.

If the Studio Display and the Mac it's connected to can do 5K60 at 10 bpc using a single DisplayPort 1.4 HBR2+DSC signal (like the Pro Display XDR can for 6K60), it is possible to run two Studio Displays at 5K60 from a single Thunderbolt port and a hub or dock like the CalDigit TS4 (which can run two XDRs at 6K60).

If the Studio Display and/or Mac it's connected to need two DisplayPort 1.2 HBR2 signals for 5K60 at 10 bpc ("dual-link SST" like the LG UltraFine 5K does; or because the Mac can't do DisplayPort 1.4 plus DSC), it is not possible to run two Studio Displays at 5K60 from a single Thunderbolt port or hub or dock.
