I have a now-old Dell 30" monitor, that runs 2560x1600. I have a (mini)DisplayPort to Dual-link DVI adapters, which plug into the Thunderbolt port - you know, the $100 one :( - and use it with my Air, and it works superbly. Bravo.

Next step is to buy a 27" iMac, so I'm wondering if I'm going to be able to use the same adapter to drive that same 30" monitor. I'm thinking there should be enough graphics power to push all those pixels, though sure, I won't be playing dual-mon games or anything. :(

There should not be any issues at all. In fact, the 27" iMac has two thunderbolt ports, so theoretically you should be able to drive up to four external thunderbolt displays (two per port), but I've not seen that confirmed anywhere.
 
Good to know - and interesting about the double TB ports, forgot about that. I was thinking about maybe getting a Thunderbolt display as well, but not sure I want to get myself locked into TB-only hardware, at least not until we start seeing more devices support it.
