I'm a recent Cord cutter. I have an outside antenna which gets me about 40 channels in HD. I'm using a 2009 Mac Mini with Plex on my TV. I'd like to use it with a device to add Time Shift recording in HD to the Mini. What's the best of the current crop of offerings. The mini is up to date running Lion.
 
EyeTV is probably still the best thing around.

Unfortunately you're not going to find anything that integrates into Plex
 
Look into the HD HomeRun. Elgato has a bundle that combines the EyeTV software with the dual-tuner HDHR.

Also, where are you located that you can get 40 HD channels with an antenna? Or do you mean 40 digital channels+subchannels?
 
I've tried to like EyeTV. I got it bundled with my HDhomerun tuner. Unfortunately, windows media center 7 smokes eyetv in just about every respect. Perfect remote integration. A modern tv style display. Support for music and movies, not just tv. I'd love to use eyetv so I could get rid of the extra box I have running windows but it just doesn't seem feasible.
