Hi Guys

Is it possible for a early 2008 2x 2.8 GHz quad core mac pro to edit 4k video once it has been upgraded?

yes, it's more of a how fast do you want to edit?
look in to proxy workflows, work with something like 720p DNX-HD/prores LT proxys.
depends on the app used ect ..

but it is not an ideal solotion, it will not be fast and without workarounds your using olderversions of osx.

idk if you already have the computer or not, if you do just give it a try and see how it is and relay do look in to proxy workflows if you app dose not have one bult in transcoding the video before ingestion is the game.
if you are going to buy the computer relay look in to alterntives unless your bugets is pushed hard.

Thanks for your advice, I've already got the mac I'm weighing up to see if its worth investing the money in upgrading it. I would rather upgrade it than spend hundreds on a new mac.

I could argue that it is doable depending on the codecs being used.
If you are sticking to h264/h265(HEVC) and you have AMD GPU Polaris or newer you can get some decent hardware assisted encode / decode using the AMD HWaccel hack.
You can also boot from NVME drives if you desire.
Whatever you do buy keep it future compatible with the next mac you get, even if you can't take full advantage now.
Say you come across a sweet deal on a radeon VII, you can use it in the 3,1 but you might be leaving some power on the table there until you have a newer machine.
