Does anyone know of a way to easy and quick way to disable or re-enable the stock Apple keyboard? Perhaps a keyboard shortcut that I could use to quickly disable it? I'm trying to thwart my little one from mashing on the keyboard and potentially messing something up. If rather not have to turn it off or have to hide it if possible.

Thanks!

Hi,

go to System Preferences / Accessibility / Mouse and Trackpad.

Check the tick box "Enable mouse keys".
"Options" : Check the tick box : "Press 5 times....", then "Done".

Here is your shortcut : press Alt 5 times = the keyboard is disabled.
Press Alt 5 times again : the keyboard is re-enabled.

(you can test in a TextEdit file).

There's an app for that: BabyProof
go to System Preferences / Accessibility / Mouse and Trackpad.

That helps with the regular keys, but leaves the function keys active, so a child can still launch apps or change settings. Also, a child can accidentally hit the Option key five times in a row to disable it.
