Question that I have not been able to find an answer to using the all knowing google. 
I was going through the file system on my iphone using cydia app iFile and I came across the com.apple.operator plist. I saw two strings : MaxMessageSize which is set at and integer of 1048576, and MaxVideoBitrate which is an integer of 131072.
So question is if I adjust those preferences, (mostly MaxVideoBitrate) do you think it would be possible to get better looking MMS videos sent?
