slippy slope here Apple...slippy slope. I know people (albeit not tech savvy) who struggle with iPhones and iPads of old, this new way of implimenting simple tasks would be just beyond their understating of what "off/on" means. Do not go down this route, it'll be the ruin of you. Keep it simple!
 
I’m in the camp of liking the new way it works. I think the toggle should change color depending on the state. If it’s disconnected from a network, one color. If it’s off then let it go gray. A 3D Touch action or long press could allow a further option to do what you want.
 
Apple could have solved that issue with an additional 3D Touch UI. Press Light and it's semi off, press hard and new UI pops up and you can really turn wi-fi off. But nooo... instead of improving the amazing 3D Touch capabilities Apple decided to focus more on FaceID...

There are three states that can show in control center: connected, not-connected, off. The off icon is same as not-connected but crossed out.
If you see all three icons, they make perfect sense. That you can't switch among all three is the really UX problem.
I agree they should have a long-press type action to switch to off mode from within control center.

I like the old way better. It makes more sense from a UI perspective: toggling off actually toggles off. But if a person is that conscientious about security and privacy, they will educate themselves and know to go into Settings to turn off the radios.

Nevertheless, I want Apple to revert the behaviour to what it used to be... which means nothing is going to change.

Why won’t they incorporate 3D touch wherein, like Android, you hard press the icon and it takes you in to directly in to the actual settings to manipulate on/off.. Everything has to have multiple steps ! Ugh..

Just provide a preference for the action of the button. Default it to the current behavior but the first time you use it, pop up a modal explaining what it's doing. Done.

I hate it when computer companies think they're smarter than I am, and this is a prime example. I regularly turn off WiFi when I go hillwalking in order to conserve battery for the GPS unit after it has gained its initial fix.

How about a toggle listing available WiFi networks and 'Off'?

Makes me wonder about whether the camera and mic are always one. Creepy as Über....
 
I think it should be an option under control center, or 3D Touch. I prefer this way because I always turn off WiFi at work on my phone and not my iPad (I couldn’t just forget the network on my phone because then my iPad wouldn’t connect). In the past I’d always forget to turn on WiFi again when at home, but now it just connects again.

I agree it’s not cool Apple doesn’t make it clear in the UI somewhere though.

I seem to be the only one who likes this functionality...

But I agree that it needs to be made clearer to the user somehow. Or maybe an option in the settings for the user's preferred control center behavior.

I prefer Apple’s implementation too. When I leave my house, I often can’t look up directions because my phone is still trying to connect to my home WiFi, so I toggle it off. But often I would forget to turn WiFi back on when I get to work or come back home, so my phone continues to use cellular data and doesn’t do its iCloud backup. Now with iOS 11, I can quickly and easily disconnect from any WiFi and know that it’s only temporary, and my phone will connect again whenever I change location or 5am rolls around.

Same thing when you want to pair a Bluetooth speaker to a friend’s phone. I can toggle my Bluetooth icon and it disconnects, preventing my speaker from instantly connecting to my phone. But I wouldn’t want to lose my Apple Watch connection whenever I do that.

The way I see it, Apple looked at the most common way to use the toggles in the control center and improved upon it, adding more functionality without adding more interface. This is what Apple does best. Also, there is a clear distinction between WiFi disabled and WiFi disconnected; try turning on airplane mode and you’ll see an icon with a cross over it.

Apple's reason was supposedly for people to use air drop, etc. Why cat a pop up dialog box ask to turn on wifi/bt when a user accesses air drop?
 
I much prefer the new iOS 11 UI. But because there are such clear preferences and because there is the occasional need to turn them off completely, Apple should add a 3D Touch action.

I, for one, never turn off BT, because it would disconnect my Watch and AirPods. And I pretty much only turn "off" wifi as I'm leaving my house in order to get it to disconnect from my home wifi. Otherwise, it tries to hang on until I'm down the block, with Waze giving me network errors. But as soon as I get to work, I want it to connect to our corporate guest wifi.
 
Finally some movement on this.. was a much heated debate during the betas and at the keynote. A lot of developers including myself were arguing this very point. Nice to see this is getting out there.
 
I prefer it to work like an old time light switch. When "off" it is off, when "on" it is on.

I turn off my Wifi and BT on my phone I am in public spaces because I do not want people to be able to access my phone and I do not want to waste my battery. My phone, my choice.

idk, i personally prefer the way it works now in control center.
it appears i may be in the minority though;)
