Do they every disappear? Can you delete the message from the lock screen? Any help would be appreciated.

Yes, they will time out after a few seconds.

Yes, you can access them directly by swiping the email logo across the preview.

Mine don't seem to be disappearing. the swipe did work though. Any setting that i need to change?

If it's privacy you're after, turn off "View in Lock Screen" in Settings -> Notifications -> Mail. Otherwise they persist till you dismiss them or unlock the device. And I like it that way. :)

If you want them to appear in your lock screen to tell you about a new email, but want them to disappear afterwards, just unlock your iPhone and lock it back again. That clears up the lock screen and moves all the notifications into the Notifications center.
