So has anyone figured out if it's possible to enable tethering early on iOS 4. I currently have upgraded my 3GS, but can't figure out a way to enable tethering. I've switched to the 2GB DataPro Plan, but there's not tethering option showing up.

You need to reset your network settings, then reboot. It will show up after that. AT&T still doesn't have things on their end setup for tethering though so you're still SOL.
The most likely wont enable this until iPhone 4 comes out but I kind of wish they would enable it eairly.
