That's normal. In Lion even with an Apple SSD that option is greyed out. There seems to be some differences as to whether the app really does enable trim correctly in Lion. I assume you are trying to TRIM free space on the drive? To do that (after enabling the TRIM hack), boot to single user mode then type in the command "fsck -ffy" (without the quotes).
