Entourage storing e-mail contacts?

So if anyone uses Entourage have you noticed how it stores e-maila addresses you use once or twice? Well I've got one stored in here that I really don't want to have there. It's just a second e-mail address for a friend but it's obsolete. Any ideas how to delete it?

To delete the email account, just go to your address book and delete it.

I know there's a way to prevent Entourage from saving an email address automatically. But I can seem to find it right now. It's almost 5 am and I should really get back to bed!
