I am wondering if there are any hardware experts on here to help answer this question. I wanted to add some space to my 27" iMac 2017. The only thing is that I was wondering is eSATA faster than thunderbolt 3 considering the overheads?

eSATA? There is no eSATA port on the 2017 iMac. You'll need to transition to USB or Thunderbolt and introduce overhead anyway.
