What happens if you do a clean iOS install do you have to reregister an eSIM (ee here in the UK)

Assumption but once you restore, your IMEI will register with the cell network and reactivate the phone.

It'll be reactivated again. You'll need to remove the data plan from the settings first before doing a clean install if you don't want it reactivated.
