Hey,

As Apple states that should use R-DIMMS with 192GB of RAM and below, and to use LR-DIMMS from 192GB upwards..

what would happen if you installed over the 192GB limit with R-DIMMS?

you misunderstand that one
it simply means if you order from apple and select 192 above, apple will give you LR Dimms, if below 192, apple will give you RDIMMS

You may find the following video useful go to mark 3:02.
Per 9to5mac.com:
R-DIMMs for 192GB and below (for 32GB sticks)
LR-DIMMs for 384GB and above (for 64BG sticks)
I'm not sure if this confirms or contradicts what you have working.

He's just quoting the Apple configuration options. Apple won't sell you 384GB in a 12x32GB config - they do 6x64GB instead. However, 12x32GB is fully supported. If you ever want more than 384GB, you would need to switch to 64GB sticks, and that's probably why Apple sells the 6x64GB config - they'd like to sell you more ram later. :apple::)
