I purchased a new MacBook pro from amazon on Sunday. It's being delivered today. Can I take this to a UK Apple store and change it for the model released yesterday?

You need to return it to Amazon, and buy it from the Apple Store or Amazon if you want 🙂

Whatever you do, don't open it! Amazon UK are pretty stingy compared to their US counterpart it seems.
