Hello there,

A little bit geeky this one, so need someone who knows a lot about Exchange. I have used it for a couple of years on my MacBook and iPhone

I'm thinking of moving away from Exchange for my calendar and contacts though (had some problems) and wondered if anyone had any experience with Google and iCloud and would be able to tell me the differences and offer their opinion?

I use Exchange for collaboration at work, and iCloud for everything else. There's very little difference, in my opinion. I like that iCloud allows for multiple notification times, which Exchange (at least 2010) doesn't.
There may be compliance issues you need to look into when placing stuff in cloud services as opposed to having them on a local server as I suspect the case is with Exchange (unless by Exchange you mean O365). And of course there are the usual privacy issues: Right now it seems that Apple respects the privacy of their users more than what Google does, at least if they're not lying to us.
 
My exchange provider is excellent. I use it for my office email using Outlook, it syncs to my phone as well as any other mac/pc that I configure to it. I like the fact that my provider is smaller, they are easy to contact and very inexpensive. Are Google and Apple easy to connect with in the case of a problem?
