I have used the watch when I exercise but I don't know how to use the data afterwards. Where do I see my puls, distance and so on. Is it integrated in the aktivity app?

If you look in the health app, you can add the dashboards for what you would like to see. For example, in my dashboard, I have my steps, heart rate, walking + running distance, workouts, Active Calories, Flights climbed, Sleep Analysis (from my pebble watch) and weight.

I tried to add body temperature and alcohole but don't get any data. How can I fix that?

The data has to come from somewhere and the watch doesn't read your body temperature or alcohol. If you go into the Health app and then the sources tab at the bottom, you will see all the apps and devices that have permission to update your data. Unless you have an app that is providing the data you are looking to collect, the data won't just appear out of thin air ...
