Will an external sound card really produce a noticeable improvement for an iMac? I hear that Apple supplies a high quality internal sound card

You will get different answers to that, however, in my opinion unless you get a really really good sound card with very expensive speakers, it won't make a difference.

There have been some threads on speakers here that you might want to look at:
If I were buying new speakers today, I would get the Klipsch ProMedia 2.1.
 
The imac soundcard is perfectly ok for normal audio applications, listening to music, watching movies etc.

You will only require an external card if you are doing pro audio work and require multiple ins and outs
