Since I will be removing the SSD that came with her early 2015 MBA (128GB) I am thinking about using the drive as an external drive via USB.
Can you quickly recommend an external enclosure I can use?

Note that there is a proprietary storage connector on that SSD. Not sure if you can find an external enclosure which it can be used in.
 
There is a very limited number of choices to fit the proprietary Apple SSD design, and they're all on the expensive side (around $70 US)...
 
Don't waste your time... even with the adapter to standard NVMe and then an NVMe to USB enclosure, you'll spend more for 128GB than a new 500GB Samsung T5 USB 3.1 drive. Sure, the Samsung will be slightly slower, but you'll get 4 times the storage for the same or less price. I paid less than $70 USD for my Samsung T5 a few months ago.

Excellent suggestion! I have 3 Samsung SSDs enclosed in nice, slim Orico USB 3.1 enclosures. Two of them are Samsung 850 Pro 512 gig SSDs, and the other one is a Samsung 860 EVO 500 gig model (that one is currently attached to a Roku Streaming Box, and it contains various movies and TV series for my enjoyment). They work flawlessly!
